The annual raw milk symposium presented by the Weston A. Price Foundation will be available to the public and to government officials through live streaming (and archived).

The session will feature raw milk experts and activists, including Mark McAfee, owner of the largest raw milk dairy in California and chairman of the Raw Milk Institute, Pete Kennedy, president of the Farm-to-Consumer Legal Defense Fund, and Sally Fallon Morell, founder of A Campaign for Real Milk.

10:45 - 12:00 - Producing Safe Raw Cheese, Sally Fallon Morell
Cheese is a processed product, and whether raw or pasteurized, it needs to be produced under strict sanitary conditions. Sally Fallon Morell will share her experience as a cheese maker on sanitation, plant maintenance and record keeping, and will provide tips on how to pass your FDA inspection.

1:15 - 2:30 - RAWMI Progress and Lessons from the Listed, Mark McAfee
RAWMI food safety success; creating a bright and safe future for raw milk.

2:45 - 4:00 - A New California Raw Milk Dairy, Cynthia Daley, PhD
This session will focus on the steps required to pass through the grade A permit and licensing process, including all state and county agencies that are involved and their associated costs. We will also cover the details of the on-farm Risk Analysis & Management plan to meet & exceed the needs of state standards as we work toward safe production methods for raw milk.

As a side note, I can testify to the healing power of homeopathic remedies in my own family.  Years ago, when my daughter had an ongoing sty (of months and months) that would continually come and go; I took her to a local homeopathic doctor.  After treating her with the prescribed remedies, her sty disappeared and NEVER returned!  Since then, we have used many homeopathic treatments and always been pleased with the results.  What have you got to lose when homeopathic treatment is safe and even compatible for concurrent use with prescription medicines.

Ingredients for Breakfast Kefir Pudding
  • 1 cup kefir
  • ½ Tablespoon chia seeds
  • ¼ cup oatmeal, any kind, old fashioned, steel cut, rolled.
  • Any fruit; bananas, strawberries, blueberries, raspberries, peaches, etc. Extra for topping.
  • Sweetener maple syrup, honey, stevia
  1. Add kefir to a a ½ quart canning jar.
  2. Add all other ingredients in jar.
  3. Cap jar with a lid and shake vigorously.
  4. Place in refrigerator overnight. In the morning, you can add more fruit or sweetener of your choice.

If you attended the last WAPF Chapter meeting (or read about it), you might remember this name...Dr. Dale Jacobson.  This was the man interviewing and discussing with Organic Pastures owner,Mark McAfee, in the video, Raw Milk the Whole Truth (aka The Raw Milk Controversy.) 

Dr. Jacobson is a pioneer in his own right, promoting the healing benefits of raw milk, kefirs, clabbers, and ferments for the past 20 some years!  

Aside from his knowledge on this, he also has been a chiropractor for 33 years, manages a 20 acre farm, and is an avid yoga participant.  He has written this book, Guide to Healthy Living, that is available to his patients in the Nevada City, CA region, but so graciously made it available online to others, free of charge!

This, Guide to Healthy Living, has over 340 pages of information!  It is broken into 3 parts:  Part 1-Essays on Personal Health, Part 2-The Mom Section, Part 3- Strengthening Exercises to Help Prevent Injury and Promote Healing.

Quick and Easy Egg Muffin Cups

Quick and Easy Egg Muffin Cups
This is a recipe I adapted from one of Maria Emmerich's books.  It is a really versatile recipe, one you can have a lot of fun with.  Not only are they easy to make and a great protein packed meal to keep on hand...they taste good too!  I especially like making extra and having breakfast ready on busy mornings.

Here is the recipe; you can adapt to fit your taste and style.  

You will need these items: 
  • Muffin tin
  • Farm Fresh, Free-Range Eggs (use smaller sized eggs if possible) 
  • Sliced ham or turkey (Applegate & Hormel have nitrate free)
  • Optional Filling Ideas:  cooked ground beef, cooked ground sausage, onions, chives, salsa, peppers, pickled jalapenos, bacon pieces, cheese, sliced sausage or kielbasa, etc!
  • Spices and seasonings
To prepare: 

Spray your muffin tin with oil and line each cup with your sliced meat.  Next will be your filling items you choose...just drop in what you want, since these are muffin sized cups, you only need small amounts to fill each cup.  Next is your eggs.  I find it easier to crack my eggs in a small dish and slide into the cup, but you can crack right into the tin.  Last, I season each cup and bake in a preheated oven at 400 degrees for 10-13 minutes, depending on how cooked you want your yolk.  I find they are easy to slide right out of the pan, but if you have a lot of filling or used large eggs, it is easier to loosen the cup with a spatula and remove.

    Local Chapter Meeting Info- All About Real Milk!

    Thanks again to all of you that came out to our local chapter meeting on the 4th!  I want to share some links and information that you can review. Also, this is for those of you that expressed to me you would like to have attended, but couldn't get there.

    This meeting was all about raw (also known as REAL) milk.  The milk donated and sampled was from Southern Oaks Jersey Farm in Abbeville.  Delicious stuff!

    To purchase their milk, you can either visit their farm or a rather convenient option is to join Clemson Area Food Exchange and order your milk weekly with several local pick up locations, including Liberty, Clemson, and Seneca.

    The DVD presentation we watched was, Raw Milk:  The Whole Truth, featuring a conversation between Mark McAfee (founder of Organic Pastures Dairy and The Raw Milk Institute) and Dr. Dale Jacobson of Jacobson Chiropratic.

    We learned that this is truly one of the easiest "traditional" transitions one can make in their diet.  Many important topics were discussed in this video.  There are some shorter videos that have some close information as well, I will link to them below.



    The most relevant and exhaustive site for raw milk issues, involving safety, research, history, pasteurization effects, state laws, etc. are going to be found here at www.realmilk.org.

    Some things I wanted to share that I forgot to point out at the meeting are that milk powders are not healthy!  They are oxidized cholesterol which is something you want to avoid.  Also, heating your milk in a microwave is a big NO, NO as well!  When milk is heated in a microwave it changes the protein structure and that is not for the better.  It really is best to avoid microwave use anyway!

    A Raw Milk Education Webinar Series is being offered in April for those wanting to learn more about dairy practices; for the farmer or consumer!

    Destruction of valuable enzymes begins at 118 degrees Fahrenheit, so, if your milk is even "low temperature" pasteurized, it is NOT intact of ALL its enzymes.

    The Farm-to Consumer Legal Defense Fund is a non-profit organization concerned with protecting your food freedom and the rights of family farms.  By supporting this organization, consumers gain access to raw milk and other nutrient dense foods. 

    As stated on their website:  

    "The FTCLDF protects the rights of the nation's family farms, artisan food producers, consumers and affiliate communities to engage in direct commerce free of harassment by federal, state and local government interference; it protects the rights of farmers and artisanal producers to make their products available and the rights of consumers to access the foods of their choice from the source of their choice.  Read more about our mission.
     
    FTCLDF is a true grassroots organization and receives no government funding and little or no corporate funding. Our main sources of revenue are membership fees, individual donations and grants for public interest litigation from our sister organization, the Farm-to-Consumer Foundation a 501 (c )(3).     You don't have to be a farmer to be a member!  You can support this cause as a consumer too!  

    Although, as a farmer, I would definitely consider being a member due to the ever-changing laws that farmers must face, not to mention the cost alone of attorney consultations.  

    As a member you obtain unlimited consultation with attorneys on matters within its mission statement and access to a a toll-free emergency hotline if there are surprise visits or inspections from a government agency.  These are just a FEW of the benefits to give you an idea of the worth that a membership could give.

    Share this information with your local farmers and like-minded consumers!  Let's help support our food freedom, we must be pro-active to continue to have any freedom!

    Roasted Squash and Potatoes

    Transform Squash into Something Delectable!

    Here is an easy way to get more veggies and healthy coconut oil and butter into your kids!

    In a casserole dish, add chopped yellow squash, onions, and potato wedges.  

    Spray with a healthy dose of coconut oil spray and plenty of sliced butter cubes.  

    Season with sea salt, pepper, and a dash of Mrs. Dash (no pun intended!)  Amounts are subject to your preference, but don't skimp on the butter!  ;)

    Bake at 375 uncovered for about 40-45 minutes, stirring once or twice while baking.
