Need a Healthy Cheese Ball Recipe?
Here is a healthy and delicious cheese ball recipe for you to try at your next function. When we had the WAPF chapter meeting a few weeks ago, this is the recipe I had used.
We got a lot of compliments on the taste, but I was real pleased with the ingredients. Most cheese ball recipes call for ranch dip packets or seasonings that usually contain MSG, but not this one! We used fermented, fresh horseradish to perk up the taste without junk.
I used this recipe from Food Network Kitchens for their Cheddar Horseradish Cheese Ball, and after making a few of them, I tweaked the ingredients slightly for our taste.
Here is the recipe: (My changes are in red.)
Ingredients:
1 8-ounce package cream cheese, softened
3/4 cup shredded raw sharp Cheddar cheese (2 1/4 ounces)
2 tablespoons finely chopped onion
1 tablespoon prepared horseradish (We like it with double the horseradish.)
2 tablespoons chopped fresh parsley (Also, used double the parsley.)
1 1/2 teaspoons Worcestershire sauce
Kosher salt and freshly ground pepper
2 slices bacon (Being it's bacon...we used double here too!)
1/3 cup toasted chopped walnuts (We used walnuts and sliced almonds.)
Assorted vegetables and crackers (or Flackers!), for serving (zucchini slices, cucumber slices, carrots, and celery go well!)
Directions:
1. Mix both of the cheeses, the onion, horseradish, 1 of the tablespoon parsley, Worcestershire, salt to taste and 1/4 teaspoon pepper in a medium bowl until evenly combined. Form the cheese mixture into a ball, cover with plastic wrap and chill until firm and the flavors have blended, at least 4 hours or overnight.
2. Remove the cheese ball from the refrigerator up to 30 minutes before serving. Cook the bacon in skillet until crisp, transfer to a paper towel, and when cool crumble. Mix the bacon with the nuts and remaining tablespoon parsley in a shallow bowl. Roll the cheese ball in the mixture so that it is coated evenly. Serve with vegetables and crackers.

Black Gold, Does Your Home Have It?
It is...activated charcoal powder.
To me, this is a substance that SHOULD BE IN EVERYONE'S HOUSE.
I love this stuff. It is really like a "black hole" on earth. Does it contain healing powers? Well, actually, it is pretty benign. Its magic lies in what it is capable of doing...or ADSORBING in other words.
Here is how I buy activated charcoal. In the buckets.
It is available in capsules, in chewable tablets, and in powder form. However you decide to keep it, just make sure you do.
Charcoal is nothing new or modern, but that's what I love about it. It still works the same for everyone everywhere just as it has for millennia.
The uses for charcoal consist of a WIDE range and probably not even all covered here below:
- drug overdose (emergency rooms use this a lot for drug overdoses)
- reactions to drugs
- counteract poisons
- diarrhea/dysentery
- intestinal gas and bloating
- bad breath
- bites and stings
- jaundice
- infections
- draining wounds
- filtering water
- Lyme disease
- vomiting
- whitening teeth
- removing odors in large or small areas
- detoxing
- filtering blood in dialysis machines
- some report it can even help in anaphylactic shock by adsorbing the noxious substance from the body
- use in air filters
- use in maintaining livestock and pet health
Charcoal powder can be used as a POULTICE over an infected area, bite, or wound. (Usually a poultice consists of even amounts of ground flax seed and charcoal powder, mixed with a bit of warm water, to make a "pie dough" consistency.) Spread the poultice on area and cover with plastic wrap and warm with heating pad if desired. Change poultice frequently for an open wound. We typically leave on overnight or as necessary for each situation.
Charcoal has even been used just as is, simply sprinkled on an area when nothing else was available with great success. This was recorded in the book, Charcoal Remedies

If you do buy it in large quantities like I do, it is handy to fill up a few empty supplement bottles and store the powder in small quantities wherever you think you might need it.
Charcoal is extremely safe and economical, but it shouldn't be consumed within two hours of prescription medications. (It can adsorb those medications right out.) Also, don't forget one thing when ingesting charcoal...WATER and lots of it! It can be constipating without drinking enough water with it.

Make Your Own "Happy Birthday" Ice Cream Cake!
Make your own home made frozen ice cream cake!
This has been rolling around in my head for awhile and with a recent family member's birthday...I finally tried it!
This cake was good! It not only was good, but I didn't feel any remorse eating a piece! No junky ingredients...no trans fats or yucky hydrogenated oils here! Actually no flour or sugar either.
Want to know the recipe? The two recipes I used have been posted or linked to somewhere on this blog before... they are the Coconut Flour Brownie recipe and the Easy Ice Cream Bar recipe (from Healthy Indulgences Blog.) I just combined them and made a birthday cake!!
