Lots of eggs?! Try an Egg 'n BACON Smash + Mayonnaise Recipe

Egg 'n Bacon Smash
If you find yourself with an over abundance of eggs, what do you do?  I'll tell you what we do...

When we find ourselves in that situation we always get creative.  Egg this, egg that... this time we decided to try an Egg 'N Bacon Smash.  Actually, just a fancy name for an egg salad BLT!

Here's how:

Make your favorite egg salad.  Ours is homemade mayo (*see recipe below) mixed with hard boiled eggs, sea salt, white pepper, and a few healthy squirts of yellow mustard.  

Once you have your egg salad ready, toast some sprouted grain bread, use your egg salad as your 'mayonnaise' and 'lather up' both sides of toast, add bacon, lettuce, and tomatoes.

That's it!  These were so good, the kids went through a loaf and a half of bread making them in one meal!

We cooked up several packages of bacon for these in the oven on a shallow pan.  Extra cooked bacon can be stored in the fridge or freezer for more of these yummy sandwiches!  

Plus, if you are using a good quality nitrate-free bacon (traditionally cured), (preferably pastured), SAVE your grease.  Store this in a glass jar in the fridge and you will have some tasty, and healthy fat to add to that next dish.  (Excellent in homemade tomato sauces or soups...heck, it's bacon grease, it's good in about anything!)

*Homemade Mayo*

You will need a quart wide mouth canning jar and an immersion blender for this recipe, but it is EASY and worth it to your heart health!

Oilve oil mayonnaise, homeade in quart canning jar
 In a quart wide mouth canning jar add (in this order):

  • 1 whole egg
  • 1 egg yolk
  • 1.5 tablespoons of apple cider vinegar
  • 2 tablespoons of lemon juice
  • 1 teaspoon of sea salt
  • 1 teaspoon of dry mustard powder
  • fill the jar to just a little below the 2.5 cup mark with olive oil (use a GOOD quality olive oil here or you may find it too strong)  brands I like are Zoe and Toscani, extra virgin olive oils
Now, insert your immersion blender to the bottom of jar.  Turn on and hold steady in place, do not move around just yet.  You will quickly start to see white at the bottom of your jar and the mayonnaise beginning to form, when you see this in the lower portion of jar, begin to move blender from side to side then up and down.  Voila!  You will now have yummy, fluffy, heart-healthy mayonnaise!

A Cool Cucumber Salad

If your garden is overrun like ours with cucumbers, you may like to try this salad.  We look forward to it every year when cucumbers are plentiful. 

The ingredients are:  sliced cucumbers (we like them peeled), sweet vidalia onion sliced, sour cream, and sea salt to taste.

That's it!  Serve alongside your main meal or enjoy it as an afternoon snack.  It is light and refreshing, and even my kids like it!

Cucumbers are a decent source of vitamin c and vitamin k, paired with the antioxidant properties and additional source of vitamin c and B6 from the onions. 

Add along the healthy fat from sour cream and you are talking about a salad that is as good for you as it tastes!

New Studies Confirm: Raw Milk A Low Risk Food

This is news we all knew already, but to CONFIRM it with NEW STUDIES is even better!  Hopefully this info below will help those that are not quite sure about the safety of raw milk, and dispel a lot of unfounded myths regarding it as well.

(WASHINGTON, DC, June 11, 2013)-Three quantitative microbial risk assessments (QMRAs) recently published in the Journal of Food Protection have demonstrated that unpasteurized milk is a low-risk food, contrary to previous, inappropriately-evidenced claims suggesting a high-risk profile.  These scholarly papers, along with dozens of others, were reviewed on May 16, 2013 at the Centre for Disease Control in Vancouver, BC (Canada), during a special scientific Grand Rounds presentation entitled “Unpasteurized milk: myths and evidence.”

The reviewer, Nadine Ijaz, MSc, demonstrated how inappropriate evidence has long been mistakenly used to affirm the “myth” that raw milk is a high-risk food, as it was in the 1930s.  Today, green leafy vegetables are the most frequent cause of food-borne illness in the United States.   British Columbia CDC’s Medical Director of Environmental Health Services, Dr. Tom Kosatsky, who is also Scientific Director of Canada's National Collaborating Centre for Environmental Health, welcomed Ms. Ijaz’s invited presentation as “up-to-date” and “a very good example of knowledge synthesis and risk communication.”

Quantitative microbial risk assessment is considered the gold-standard in food safety evidence, a standard recommended by the United Nations body Codex Alimentarius, and affirmed as an important evidencing tool by both the U.S. Food and Drug Administration and Health Canada. The scientific papers cited at the BC Centre for Disease Control presentation demonstrated a low risk of illness from unpasteurized milk consumption for each of the pathogens
Campylobacter, Shiga-toxin inducing E. coli, Listeria monocytogenes and Staphylococcus aureus.  This low risk profile applied to healthy adults as well as members of immunologically-susceptible groups:  pregnant women, children and the elderly.

Given that these QMRAs appear to contradict a long-held scientific view that raw milk is a high-risk food, Ms. Ijaz noted (in line with United Nations standards) that it is important to confirm their accuracy using food-borne outbreak data .  The accuracy of recent QMRA findings was scientifically demonstrated using a combination of peer-reviewed data and Ijaz’s own recent scholarly working paper, which analysed U.S. outbreak data for raw milk using accepted methodologies.

Peer-reviewed outbreak data confirming a negligible risk of illness from Listeria monocytogenes in raw milk was particularly notable, and demonstrates the inaccuracy of a high-risk designation given to raw milk in an older U.S. government risk assessment for Listeria.  The forty-year worldwide absence of listeriosis cases from raw milk presented in a 2013 scholarly review, and affirmed in the QMRA results published in 2011, is attributed by European reviewers to the protective action of non-harmful bacteria found in raw milk.
“While it is clear that there remains some appreciable risk of food-borne illness from raw milk consumption, public health bodies should now update their policies and informational materials to reflect the most high-quality evidence, which characterizes this risk as low,” said Ijaz.  “Raw milk producers should continue to use rigorous management practices to minimize any possible remaining risk.”

Ms. Ijaz used extensive high-quality evidence to further deconstruct various scientific myths from both raw milk advocates and detractors.  As Ijaz pointed out, increasing evidence of raw farm milk’s unique health benefits to young children, as well as the possible detriments of industrial milk production practices, will need to be carefully considered in future risk analyses.  She recommended an honest, evidence-informed dialogue on raw milk issues between producers, consumers, advocates, legislators and public health officials.

"The BC CDC should be commended for recognizing this important research on raw milk safety," said Sally Fallon Morell, president of the  Weston A. Price Foundation, a non-profit nutrition education foundation that provides information on the health benefits of raw, whole milk from pastured cows. "I look forward to productive discussion with the US CDC and Food and Drug Administration in light of this new scientific evidence."

Need a Healthy Cheese Ball Recipe?

Healthy Cheese Ball Recipe
Here is a healthy and delicious cheese ball recipe for you to try at your next function.  When we had the WAPF chapter meeting a few weeks ago, this is the recipe I had used.  

We got a lot of compliments on the taste, but I was real pleased with the ingredients.  Most cheese ball recipes call for ranch dip packets or seasonings that usually contain MSG, but not this one!  We used fermented, fresh horseradish to perk up the taste without junk.

I used this recipe from Food Network Kitchens for their Cheddar Horseradish Cheese Ball, and after making a few of them, I tweaked the ingredients slightly for our taste. 

Here is the recipe:  (My changes are in red.)

1 8-ounce package cream cheese, softened 
3/4 cup shredded raw sharp Cheddar cheese (2 1/4 ounces) 
2 tablespoons finely chopped onion 
1 tablespoon prepared horseradish (We like it with double the horseradish.)
2 tablespoons chopped fresh parsley (Also, used double the parsley.)
1 1/2 teaspoons Worcestershire sauce 
Kosher salt and freshly ground pepper 
2 slices bacon (Being it's bacon...we used double here too!)
1/3 cup toasted chopped walnuts (We used walnuts and sliced almonds.)

Assorted vegetables and crackers (or Flackers!), for serving (zucchini slices, cucumber slices, carrots, and celery go well!)

1. Mix both of the cheeses, the onion, horseradish, 1 of the tablespoon parsley, Worcestershire, salt to taste and 1/4 teaspoon pepper in a medium bowl until evenly combined. Form the cheese mixture into a ball, cover with plastic wrap and chill until firm and the flavors have blended, at least 4 hours or overnight.

2. Remove the cheese ball from the refrigerator up to 30 minutes before serving. Cook the bacon in skillet until crisp, transfer to a paper towel, and when cool crumble. Mix the bacon with the nuts and remaining tablespoon parsley in a shallow bowl. Roll the cheese ball in the mixture so that it is coated evenly. Serve with vegetables and crackers.

Black Gold, Does Your Home Have It?

Black Gold!  Yep, it is valued highly in my house...what is it you may ask?  

It is...activated charcoal powder.  

To me, this is a substance that SHOULD BE IN EVERYONE'S HOUSE.  

I love this stuff.  It is really like a "black hole" on earth.  Does it contain healing powers?  Well, actually,  it is pretty benign.  Its magic lies in what it is capable of doing...or ADSORBING in other words.

Here is how I buy activated charcoal.  In the buckets.  

It is available in capsules, in chewable tablets, and in powder form.  However you decide to keep it, just make sure you do.

Charcoal is nothing new or modern, but that's what I love about it.  It still works the same for everyone everywhere just as it has for millennia.

The uses for charcoal consist of a WIDE range and probably not even all covered here below:
  • drug overdose (emergency rooms use this a lot for drug overdoses)
  • reactions to drugs
  • counteract poisons
  • diarrhea/dysentery
  • intestinal gas and bloating
  • bad breath
  • bites and stings
  • jaundice
  • infections
  • draining wounds
  • filtering water
  • Lyme disease
  • vomiting
  • whitening teeth
  • removing odors in large or small areas
  • detoxing
  • filtering blood in dialysis machines
  • some report it can even help in anaphylactic shock by adsorbing the noxious substance from the body
  • use in air filters
  • use in maintaining livestock and pet health
Charcoal powder can be used in water in a SLURRY (about a tbsp of charcoal in a glass of water)...stirred and drunk immediately for acute situations.

Charcoal powder can be used as a POULTICE over an infected area, bite, or wound.  (Usually a poultice consists of even amounts of ground flax seed and charcoal powder, mixed with a bit of warm water, to make a "pie dough" consistency.)  Spread the poultice on area and cover with plastic wrap and warm with heating pad if desired.  Change poultice frequently for an open wound.  We typically leave on overnight or as necessary for each situation.

Charcoal has even been used just as is, simply sprinkled on an area when nothing else was available with great success.  This was recorded in the book, Charcoal Remedies, about hurt animals who actually lived with only a sprinkling of charcoal on an open wound when first thought that they were left to die.

If you do buy it in large quantities like I do, it is handy to fill up a few empty supplement bottles and store the powder in small quantities wherever you think you might need it.

Charcoal is extremely safe and economical, but it shouldn't be consumed within two hours of prescription medications.  (It can adsorb those medications right out.)  Also, don't forget one thing when ingesting charcoal...WATER and lots of it!  It can be constipating without drinking enough water with it. is where I purchase ours from.  For your convenience and local shopping, it is available here in many forms.

New Safety Study Keeps Confirming Nano-Silver Superior

This has been rolling around in my head for awhile and with a recent family member's birthday...I finally tried it!  

This cake was good!  It not only was good, but I didn't feel any remorse eating a piece!  No junky trans fats or yucky hydrogenated oils here!  Actually no flour or sugar either.

Therapeutic Castor Oil Packs

I do not recommend castor oil for internal use, but for external use it has wonderful healing benefits!

Castor oil applied topically in the form of a "castor oil pack" was talked about much by the late psychic healer Edgar Cayce, and then re-popularized by the primary care physician, William McGarey, author of The Oil That Heals: A Physician's Successes With Castor Oil Treatments

According to a double-blind study titled the "Immunomodulation through Castor Oil Packs", published in the 1997 Journal of Naturopathic Medicine in a report by Harvey Grady, castor oil applied topically was found to enhance immunologic function. 

This study revealed that a castor oil pack therapy of a minimal two-hour duration produced an increase in the number of T-11 cells and during the following 24 hour period, there was an increase in the total number of lymphocytes.  

(Lymphocytes are your immune system's disease-fighting cells and are produced and stored mainly in your lymphatic tissue- such as thymus gland, spleen, and lymph nodes.) 

Waste and toxin build up is removed through your lymphatic system, so if this system gets congested, it can lead to inflammation and disease.  As the castor oil pack is applied, this increase in the action of the lymphatic cells helps to reduce congestion and increase lymphocyte production, thereby increasing healing and toxin removal from the affected area. 

Castor oil packs are easy and economical to apply.  You will need:
  • a high quality, cold-pressed castor oil (one that specifies such on the bottle)
  • wool flannel (enough to fold in about 4 layers)
  • plastic wrap or a large enough plastic bag
  • a heating pad or hot water bottle
  • a large enough towel to cover area
Soak the flannel entirely in castor oil (you want it wet, but not dripping with oil.)  This can be done in a pan or dish able to contain both the flannel and castor oil.  Next, apply the layered flannel to the area that needs treatment.  Cover flannel with plastic wrap or a plastic bag.  Begin to apply heat to area, start on low and work up to medium; keep heat at a comfortable setting- do not allow it to burn the skin.
Cover or wrap area with towel to keep the heat in.  Leave pack on for a minimum of 45 minutes to a maximum of 2 hours.  If desired, the skin can be cleansed with warm soap and water after removal.  This pack can be reused up to 30 times.  (Store in an airtight bag or container in the refrigerator, it is best to warm up some before using again, also one pack per person is recommended.)

Some of the indications for use are:  
  • uterine fibroids,
  • benign physiologic or polycystic ovaries, 
  • any liver or gall bladder disorder,

Are You an Emotional Eater?

If you have EVER been an emotional eater, then this is for you... ANY KIND of EATING DISORDER, BODY IMAGE DISORDERS...!!

You see, I have been there a time or two in my life.  

Eating for any other reason other than hunger is EMOTIONAL EATING.  

It is true. I have read the book Weight-Loss Apocalypse: Emotional Eating Rehab Through the HCG Protocol by Robin Phipps Woodall, and it struck a cord with me.

You see there were times, that I may not have wanted to admit it, but I found reasons to eat when my body was NOT calling for food.  By eating out of sync with your TRUE hunger signals, you disrupt your whole endocrine system, thereby wreaking havoc with your HORMONES.

Through much prayer and meditation, (what I would consider an era of rehab in my life)  I have finally found what works and doesn't work for me regarding weight loss, myself, and ultimately my happiness with or without the SCALE.  Take heart, you can find that place too!

Watching videos (as well by Robin) which you can find here on YouTube, has helped me also in this realization.  Even though I follow a very good diet, (one in which I don't consume a whole lot of processed foods or junk) I know now the missing link was HUNGER.

If you find yourself eating for any rationalization other than being truly hungry, you just may benefit from watching Robin's videos too.  You don't have to follow the HCG diet or protocol to apply her "hunger scale" to your life.  You don't even have to eat a certain kind of diet to apply this to your life.  All you have to do is be honest with yourself and step back from food, dieting, and exercise, and acknowledge you may need to reevaluate what you do and WHY YOU CHOOSE TO DO IT.

This is a must read book for parents who need an extra understanding of medical terms, risk, and side-effects of mainstream medicine.  

The late Dr. Robert Mendelsohn practiced pediatric medicine for almost 30 years.  During this time he witnessed treatments and diagnostics in this field in which he was able to correlate what worked, what was deemed necessary, and what he felt was unnecessary intervention (with explanations WHY he felt so as well.)

Dr. Mendelsohn had received many awards for excellence in medicine and medical instruction.  He had served as the national director of Project Head Start's Medical Consultation Service, chairman of the Medical Licensing Committee for the State of Illinois, and associate professor of Preventive Medicine and Community Health in the School of Medicine of the University of Illinois.

He is quoted by many in the medical world as a heretic, but that is the way of anyone standing against mainstream ideas, is it not?

This book puts many things into perspective, especially helpful to any parent.  

I highly recommend reading this book, it would serve as a good reference book on your shelf as well.

Breakfast Anytime!

Eat Your Breakfast For Supper!
Some days are just busy!  

Here is an idea for you to try on those days when supper time just seems to creep up on you and you find yourself unprepared.  Not that it is a new idea, but one that is sometimes forgotten.

Our "breakfast for supper" is:
  • a small bunch of organic lettuce
  • a few eggs sunny side up (eating yolks uncooked allows for more nutrients to remain in yolk)
  • a few slices of bacon  (Trader Joe's has some great pastured bacon!)
  • a piece of sourdough bread with lots of Amish butter 

Remember to find FRESH, local FARM eggs from a trusted source. Plus, in this meal the yolk is all the "dressing" needed for the lettuce.

Also, always check your ingredients when purchasing sourdough bread.  If YEAST is listed, then it is not a true sour-leavened bread and I would AVOID it.

Trader Joe's has a decent sourdough bread and also some sprouted breads we purchase (to maximize nutrient absorption and minimize phytic acid from the grain.) 

A tip on preparing bacon, is to pre-cook big batches and freeze so it is ready when you need it, toaster ovens work great to reheat bacon!

This is a quick, nutritious meal, that can be prepared in minutes!

Dr. Oz, Amalgams, and Toxicity

Looks like Dr Oz hit another hot topic on Thursday, March 28th, 2013.  

On this show he aired a segment on Mercury Amalgam (silver) fillings.  

This is a fairly informative show for people who have never heard, but still lacking in some very important information.  Click here to watch the show.

By airing this show and exposing the truth about the toxicity of mercury (amalgam fillings) it instigated an immediate alert from the American Dental Association (ADA) to "provide talking points to use with their patients."  

According to Dr. Mark Breiner, from Breiner Whole-Body Health Center in Connecticut, the show could have been better.  

The two dentists that appeared on this show do not place amalgam fillings, one for aesthetic reasons, and one for fear of their potential toxic effects.  

These two dentists also said that patients should ABSOLUTELY NOT have their fillings removed.  They also did NOT EXPLAIN WHY the mercury vapor is so high during removal or HOW to protect the patient, the dentist, and the dental assistant during removal.  

They should have educated that to even have ONE MERCURY filling removed improperly, can be very dangerous to all involved. 

REMOVING AMALGAMS is definitely a healthy consideration, BUT having a QUALIFIED dentist is of most importance!

It also would have been beneficial to see some of this research addressed as well:

  • Studies done on sheep showed that mercury from dental amalgams migrated to all the tissues and organs.
  • This same study also showed that the mercury passed the placental barrier, going directly to the fetus.
  • Other research has shown that mercury from fillings concentrates in the mother's milk and passes to the infant.
  • Studies that show that mercury comes off of these fillings WITH ANY stimulation in the mouth.
The segment on dealing with the ways to protect yourself if you have mercury fillings, such as avoiding acidic foods (such as tomatoes and grapefruits- really? stop eating these foods?), drink coffee through a straw(?) left much to be desired.  The helpful advice was however to eat cilantro, garlic, and take a chlorella supplement.  BUT, even certain chlorella can be high in mercury, so you need to know it is from a high quality source.  Dr. Breiner states "trying to eliminate mercury from the body, while still having mercury fillings in the mouth, is like trying to bail water from a boat with holes in the hull."

Also, if you have never read the book Cure Tooth Decay, by Ramiel Nagel , you may want to dive into it.  AVOIDING cavities and FILLINGS altogether is not just myth but reality for many people.  HEALING cavities is also a reality.  Diet and nutrition are key, so if you are serious about your health, these are books you want to read!

Nutrient-dense foods, the BEST supplement your diet could ever have.
Many people ask me what are the most important supplements to take? 

To answer this with just one supplement is hard when few people understand the basis of the nutritional burden that MOST people's bodies are under from their diet.
