She educates people that 4 carbohydrates = 1 teaspoon of sugar in your bloodstream regardless where those carbohydrates come from.
(Meaning a simple carbohydrate or a complex carbohydrate all are broken down into SUGAR.)

I like being able to prepare foods for myself and family that don't constantly raise their blood sugars and create insulin havoc -

(Be aware though, that these books do use alternative flours and sweeteners such as: coconut flour, nut flours, stevia, xylitol, erythritol, Swerve, etc.) These type of sweeteners are not for everybody as some people do not agree with use of certain sugar alcohols or sugar substitutes (WAPF does NOT recommend use of them.)
As for me, we don't overuse them and I do buy GMO free xylitol and erythritol. Some things you just have to decide on your own. I love avoiding wheat as much as possible, so learning how to use alternative low carb flours is great. When your family likes what you prepare...that is a victory!
